Crock Pot Italian Beef Sandwiches

Next week I get to travel to my home town.  Chicago.  I’ve been living in Texas for 7 years now and I’m learning to adjust.  The summers are hot.  I mean hot.  This year we had over 70 days of triple digit temps.  Around August the grass turns brown. The leaves begin to wilt.  My roses don’t want to bloom.  If any fellow Texans are reading this please  please give me some pointers on how to keep my flowers blooming!  But I digress.

Back to my home town.  What I really miss and can’t get here.  Anywhere.  Is a good italian beef sandwich.  If any of you live or have been to chicago and have eaten at Portillos,  you know what I mean.

Here I am, the last time I went home…..

Yep, that’s me stuffing my face.  I’m not home 12 hours before I have to go to Portillos and get my fix.  My family knows this and they plan accordingly.

Since there is not an italian beef worth honking about in Texas, I have to make do with my own family recipe.  I thought I would share it with you today.

3-4 lb pot roast

2 cups water

2 beef bouillion cubes

1 tsp. onion salt

1 tsp. chili powder

1 tsp. garlic salt

1 tsp. oregano

Cook roast in crockpot on low overnight.  In the morning, tear meat into small pieces.  Leave the meat juice in the crockpot and add all other ingredients to the meat.  Simmer in crockpot for 4-5 hours or until ready to eat.  Serve on Kaiser rolls or french bread.

 

You can add mozzerella or cheddar cheese if you want a cheesy beef.  Also,  sweet green peppers to give it a little kick.

The Sky is Filled with Butterflies

My backyard has been taken over by butterflies.  They cluster around my (aptly named) Butterfly Bush.  They dance on the early autumn breezes and circle around my dog’s head.   It the annual monarch migration and they are headed south, like we all wish we could do, for the winter.  Down to Mexico they go.

Eating habits and other things bad for you

I just realized that I’ve eaten nothing but junk for 3 days.  My insides are not happy.  I feel like crap.  I’m well passed the age that I can eat whatever I want and damn the consequences.  So I wonder, can I change my eating habits for the better?  Does my desire for a healthier life outweigh my craving for sugar and salt?  Is it possible to actually try the recipes in the many many many cookbooks that Brilliant Guy uses for his hospitality business?

Can I ignore the inner voice that tells me “I want to eat and I want it now”?

Remembering

Where were you?  We all can answer that question without hesitation.  Just think about it.  Ten years later and you can still remember where you were, what you were doing and who you were with.  My prayers are for everyone that was impacted by that day.  That includes you and me.

Bluebonnets

The Bluebonnets are here!  Having been in Texas for only seven years, I’m still amazed when I see the native Texas flower in full bloom along the highways.  Bluebonnets are absolutely beautiful.  So may shades of blue, lavender and white.  I come from Illinois where the native flower is the violet.  Violets are pretty of course, but you don’t see fields and fields of them every spring.  At least I never did and I lived there for 40 years!   Texas is growing ever larger in my heart.

I Love Mini Stay-Cations!

Today is the last day of my mini stay-cation. These are usually four day weekends that don’t include a holiday. I stay close to home and get things done around the house. I sew, read, snooze, go shopping, eat out, bug my husband who has an office at home. Believe me, he just LOVES these weekends. It’s going to be 80 degree’s today. I love Texas in the spring. The Bluebonnets are popping up and it’s a sight that usually sends folks running for their cameras to take pictures of their darling little one’s sitting among the pretty flowers. If you look on Flickr and search for Texas Bluebonnets, you’ll see what I mean. It truly is a beautiful site to see. Well I’m off to do something fun today. Well mostly fun. I think shopping and laundry is on my list too. Oh well. Doesn’t vacation always end with a ton of laundry?

Let Me Make A Confession

I’m having a secret love affair with fabric. I can’t seem to stop buying it. Fat quarters, charms, jelly rolls, scraps, I don’t care, I love them all. I get started on one project and another fabric bundle catches my eye and I gotta have it. So I start dreaming of another project using that print, or that color, or that pattern. It’s enough to drive a girl insane! So I thought I would create this blog as a kind of therapy for my new addiction…Hi my name is Lori and I’m a quilter.
Here’s my first quilt. It’s only the top and not finished yet, but I had so much fun making it using fabric that friends gave me.
